Chocolate Drizzle Flapjack

Last weekend I got my bake on and decided to make some flapjacks. I’ve never made them before so I thought I’d have a go seeing as though they are a slightly healthier option apposed to your cakes and cookies (I’d like to think so anyway – hello oats & dates!). Considering it was my first try and I went off my own made-up measurements, my flapjacks tasted pretty good despite being a little dry. I think I added a few too many oats so I’ve adjusted the recipe below to make them perfect. Here’s what you need and how to do it… 

– 150g butter
– 50g brown sugar
– 75g pitted dates
– 5 tablespoons of Golden Syrup
– 250g oats
– 75g of milk chocolate

1. Preheat your fan assisted oven to 170 degrees (190 for non assisted) and line a baking tin with some greaseproof paper.
2. Heat up your dates in a pan with a little bit of water until soft and squidgy. Pop into a blender or food processor and blend until relatively smooth.
3. Place your butter, sugar, syrup and date mixture in a pan and warm in a pan on a low heat until combined. If you have any lumps left from your dates and you are fussy like me, use a sieve to separate them from your mixture.
4. Add your oats bit by bit and make sure they are completely coated.
5. Pour the mixture into your lined baking tin, spread evenly and pop in the oven for 15-20 minutes until golden.
6. Melt some chocolate in the microwave and drizzle over the top of your flapjacks and allow to cool.
7. Finally, cut your flapjacks into squares and enjoy!
